My mom is an absolute mall lover and as kids we had to endure hours upon hours of shopping. We were usually pretty well behaved but it took a little bit of bribing in the form of food. One of my favorite restaurants in the mall was CPK. CPK was pretty new on the scene when we were younger so the line was always out of control. When my mom knew she was almost finished she would let us go over so that we could retrieve our plastic pager and stare at it for the next 45 minutes until it vibrated and lit up. As soon as we sat down I got right do coloring because I never needed to look at the menu, my order was BBQ chicken pizza every time. I honestly do not recall the last time I went to CPK but making it at home has 100% kicked any craving I have to go.
Barbecue Chicken Pizza
Ingredients
- 1 cup shredded rotisserie chicken
- 1/2 cup plus 3 tbsp bbq sauce
- 1 cup gouda
- 1 cup mozarella
- 1/4 cup thinly sliced onion
- 1/4 cup chopped cilantro
- 3 personal pizza doughs I buy mine from my local pizzeria, just ask for the dough and they'll package it up for you
Instructions
- Place pizza stone in the oven and preheat to 550 (yes, it’s hot! This will make the perfectly bubbly crust!)
- Toss shredded chicken with 3 tbsp of bbq sauce and set aside.
- Let dough come to room temp them on a lightly floured working surface, stretch and gently press dough into a 10” round. Carefully transfer to pizza stone and bake for 4 mins.
- Remove dough from oven and top with bbq sauce, chicken, cheeses, and onion. Bake for another 4-5 mins then remove from oven and top with cilantro!
