I am a big fan of overnight oats. My go to recipe is this peanut butter, banana, and honey recipe but every now and then I like to shake things up. If you’re a coffee drinker, you’re going to love this one. It’s made with 1/2 a cup of espresso which is sure to give you a nice little jolt of energy!
Brown Sugar Espresso Overnight Oats
Ingredients
- 1/2 cup espresso
- 2 tbsp brown sugar plus more for topping
- 1 cup quick oats you can also use regular oats and blitz them quickly in a blender
- 1/4 cup milk I like soy
- 2 tbsp yogurt I like Kite Hill Greek
- 1/2 tsp cinnamon plus more for topping
- optional: sliced banana
Instructions
- Add all ingredients to a bowl and mix well.
- Let the oats sit in the fridge for at least 30 minutes or overnight.
- Stir the oats to reconstitute them, top with your preffered add-ons, some more brown sugar, and enjoy!
