Jen Curley, or @snackqween, is one of my favorite food followers on TikTok. She posted a dumpling sauce a recipe a few months ago and ever since I’ve been dying to make some. Even though this is dumpling sauce it’s by no means limited to only being used on dumplings. It’s perfect with eggs, noodles, or even as a stir fry sauce. The sky’s the limit.
Egg Rollups and Dumpling Sauce
Ingredients
- 1 scallion, thinly sliced
- 1 1/2 tbsp sesame oil, plus more for cooking the eggs
- 1 1/2 tbsp olive oil
- 1/4 cup tamari
- 1 tbsp oyster sauce
- 1 tsp ginger, minced
- 1 tsp garlic, minced
- 1 tsp toasted sesame seeds
- 2 tsp rice vinegar
- 1 pinch red pepper flakes
- 1 tsp granulated sugar
- 1 small tortilla
- 1 egg, scrambled
Instructions
- Add the oil to a pan on medium-high heat and cook until the oil shimmers.
- Add the rest of the ingredients except the egg and tortilla and 1/2 the chopped scallions to a bowl. Once the oil is ready, pour it over the rest of the sauce ingredients and mix well.
- Heat up a small skillet over medium-high heat then add the tortilla to the pan and warm for 30 seconds on each side then set aside.
- In the same pan, add a few dashes of sesame oil add 1/2 a chopped scallion. Cook for about a minute then add your scrambled egg. Use a rubber spatula to gently mix the egg then let it sit for about a minute to cook.
- While the top of the eggs are still wet, place the tortilla on top and let it cook for another minute. Once the eggs have set, flip them and cook the tortilla on the bottom for another 30 seconds to a minute.
- Remove the tortilla and egg from the pan and roll it up. Serve with the dumpling sauce and enjoy!
