I live with my sister who is vegan so we sometimes have a hard time choosing desserts to make that she can eat. Rice Krispie Treats are definitely a staple because they’re super quick to make and what could be wrong with (vegan) buttery marshmallows and Rice Krispies. So when I saw this recipe by Juli of Truly Juli I knew I had to test them out.

Rice Krispie Treat Cookies
Ingredients
Rice Krispy Crunch
- 2 1/2 cups Rice Krispies cereal (85g)
- 1/4 cup malted milk powder (20g) optional
- 1 1/2 tbsp sugar (20g)
- 1/2 tsp kosher salt
- 4 tbsp melted butter I used Miyokos Cultured Vegan Butter
Cookie Dough
- 8 tbsp unsalted butter (115 g, 1 stick) I used Miyokos Cultured Vegan Butter
- 2/3 cup sugar (125g)
- 1/3 cup packed dark brown sugar (75g)
- 1 egg
- 1 tsp vanilla extract
- 1 cup flour (120g)
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp kosher salt
- 1 cup mini marshmallows
Instructions
- Preheat oven to 275°F.
- Make Rice Krispie Crunch: Add 2 1/2 cups Rice Krispies, 1/4 cup malted milk powder, 1 1/2 tablespoons sugar, and 1/2 teaspoon of salt to a bowl and mix. Then add 4 tablespoons melted butter and combine.
- Bake Rice Krispie Crunch: Spread crunch out on a baking sheet and bake for 15 minutes. Allow to cool completely on a wire cooling rack. Increase oven temperature to 375°F.
- Combine butter and sugar for dough: In a large bowl combine 2/3 cup sugar, 1/3 cup dark brown sugar, and 8 tablespoons unsalted butter and beat until light and fluffy. Add 1 egg and 1 teaspoon vanilla extract and beat again for 1-2 minutes.
- Add dry ingredients: Add 1 cup flour, 1/2 teaspoon each baking powder and baking soda, and 1 teaspoon salt and mix until just combined.
- Add crunch and marshmallows: Add in crunch and marshmallows and gently mix until it's just incorporated into the batter.
- Form balls: Portion out dough into 2" balls and refrigerate for 1 hour or freeze for 30 minutes.
- Bake and serve: Bake for 12-15 minutes, checking every minute over 10 minutes. Let cool for 10 minutes to set and enjoy!
