I used to get the most delicious bean salad at my local grocery store and I’d eat the whole container in a day. When I saw Gal from Something Nutritious it brought me right back to digging into the King’s bean salad with a white plastic store. before I even left the grocery store.
Three Bean Salad
Ingredients
- 1 red bell pepper, minced
- 3 stalks celery, minced
- 3 Persian cucumbers, minced
- 1/4 red onion, minced
- 1/2 cup fresh parsley, chopped
- 1 can each – great northern white beans, chickpeas, and kidney beans
Dressing
- 1/4 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 3 tbsp lemon juice
- 1/2 clove gralic, grated
- 1 tbsp dijon
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp honey
Instructions
- Add lemon juice to a small bowl with grated garlic and let sit for at least 5 minutes. Then add to a jar with the rest of the dressing ingredients and shake well.
- Add chopped veggies and beans to a large bowl and toss in dressing.
- Serve with chips or over a salad and enjoy!
