I am not a huge breakfast person but I definitely need to start my day off with a little something to jump start my morning. I was on an overnight oats kick for months but my one constant breakfast that’s been in my rotation for years are these homemade perfect bars. I’ve adapted this Erin Lives Whole recipe to cut down a bit on the sugar and incorporate almond flour, in addition to oat flour. I like to leave them in the freezer and let them sit on the counter for 5 minutes or so before I eat them, but you can also leave them in the fridge for a softer texture.
Homemade Perfect Bars
Ingredients
- 3/4 cup oat flour (90 g)
- 1/2 cup almond flour (60 g)
- 1/2 cup vanilla protein powder (60 g)
- 1/2 cup natural peanut butter (140 g)
- 1/4 cup honey (84 g)
- 2-3 tbsp olive oil
- 1/3 cup mini chocolate chips
Instructions
- Mix all ingredients together in a bowl, start by adding 2 tbsp of oil then mix and if the mixture is too crumbly, add another tbsp of oil.
- Press dough into a loaf pan lined with parchment paper and freeze for 1-2 hours then remove and slice into bars. Store in the fridge for 2 weeks or the freezer for a month.

Im in Australia and we don’t have GF Oat flour – due to processing requirements I think. What would you suggest instead?

Hi Erin! You can totally just use all almond flour. They will turn out just as good!
